Calamari Cooked in Wine with Pine nuts and Currants
This Sicilian seafood dish is absolutely amazing. The unique combination of ingredients is full of flavor and aroma.
- 1 kg of fresh or frozen calamari,cleaned and washed
- 2 large onions,finely chopped
- 1 leek, white part only
- 2 cloves of garlic
- 1 ripe tomato,peeled and deseeded
- 1 small cup of currants
- 1 small cup of pine nuts
- 1 cup of olive oil
- a little cinnamon
- 2-3 cloves
- salt and pepper
Soak currants in warm water.
Place calamari in a pan, without water, over low heat. Allow to soften and the juices to leave the flesh.
In another pan, heat the oil; saute the spring onions and cook the pine nuts till transparent.
Add the calamari.
Stir 2-3 times along with the onions and the pine nuts; pour in the wine.
Add the garlic, pepper, herbs and spices; simmer over low heat.
When almost done, add the tomato and the currants.
Cook till ready and the tomato has combined completely.
