Pastrami, Cheese and Tomato filled Pastry (Pita Kessarias)
This pastry pie from Kessaria is bursting with piquant flavors.
4 tbs of butter, melted
6 sheets of phyllo pastry
½ kg of semi hard cheese, sliced (kasseri, preferably)
20 slices of pastrami
2 medium tomatoes, cut in slices
a little cumin
black sesame seeds
Grease a pan with butter and layer half the pastry sheets over it, brushing each one with melted butter.
Add a layer of cheese, and then top with the pastrami and slices of tomato.
Sprinkle the tomatoes with a little cumin, add the remaining slices of cheese and cover with 3 sheets of pastry brushed with melted butter.
Sprinkle the top with black sesame seeds and bake in a medium preheated oven until golden brown on top.
