Pumpkin Soup with ginger, bitter almonds and leek cannelloni.
For the first course, I would recommend this pumpkin dish.Pumpkin is a classic winter vegetable which, with the right presentation, can blend in beautifully with the other dishes on the festive table. Ginger, will provide the required titillation to the throat; the almond, will add its peculiar taste and make us wonder and all this, soothed with the sweetness of leek.
For the second course, I recommend a combination of Black and Gold. Black risotto with truffles and golden leaves. Absolute celebration.

To continue light soufflé, nothing better. Sweetness of red mullets balanced with the citrus taste of sorrel.

For the forth course, wild boar is my one hundred percent winter suggestion. Compote of cornel is an excellent suitor to quince giving a very special taste to a truly special day.

Finally, crunchy kataifi phyllo with bitter orange cream and concentrate of green apples will “close” the evening on sweet note.
