Sweet Pumpkin Pies
Serve these pumpkin pies as dessert , to accompany coffee or as a great homemade snack in a lunch box or at home!
Ingredients for pastry
1250 gr of flour
1 ½ cups of olive oil
a little salt
1 tsp of lemon juice
Ingredients for filling
500 gr of cleaned pumpkin
1 ½ cups of cracked wheat
350 gr of raisins
1 tsp of cinnamon
Chop the pumpkin into pieces, sprinkle with salt and leave in a colander for 10-12 hours or overnight.
Prepare the pastry by combining all the ingredients and kneading; set aside for a while in the fridge.
Heat some oil in a pan, add the finely chopped onion and pumpkin pieces. Allow to cook for a little while.
Add the cracked wheat, raisins, nutmeg and a little sugar (depending on how sweet you want the filling to be); mix well.
Roll out the pastry and cut into circles. Place a tablespoon of the filling in the center of each pastry circle.
Fold over and press the edges together. Place the pies on a greased tray and bake in a hot oven for 15-20 minutes.
Reduce heat and bake for a further 10 minutes, approximately.
Sprinkle with sugar and cinnamon, and serve.
