Rooster in Wine (Kokkoras Krasatos)
This traditional Greek rooster stew in wine, kokoras krasatos, is slightly different from the French version coq au vin but just as delicious.
1 rooster (cut in helping sizes)
1/4 cup olive oil
1/2 lt red wine
5-6 garlic cloves finely chopped
400 gm onion finely chopped
1 can peeled, finely chopped tomatoes
1 finely chopped carrot
1. Pour the olive oil in a cooking pot and brown the rooster.
2. Remove the meat, add the garlic and onion and saute while stirring.
3. Add the rooster again to the pot together with the wine, thyme, carrot, tomato, and let it simmer.
4. Serve with home made hilopites, the delicious greek pasta.
