Skewered Fish with Mediterranean Spices

Serve these succulent low-fat fish skewers with a salad of fresh vegetables.

Ingredients:

700 g of filleted fish (salmon,swordfish or other), cut into cubes
juice and grated rind of 2 oranges
2 cloves of garlic, finely chopped
1 tsp of hot paprika
1 tsp of cumin
1 tsp of dried coriander or 1 tbs fresh coriander, finely chopped
salt, pepper
1/2 cup of olive oil
1 glass of white wine

Procedure:

Preheat oven at 200° C.

Combine all the ingredients to make a marinade; add the fish and leave in the fridge for 6-8 hours, stirring regularly to distribute the marinade evenly.

Thread fish onto skewers and grill or cook in a pre-heated oven turning them around once for 10 minutes, or until done.
