Potatoes, Mushrooms and Cheese

These savory, creamy potatoes baked with mushrooms, bacon and cheese are a delicious side dish to any meat or poultry but they are so fearty they can even be eaten alone.

4 potatoes, sliced
250 g mushrooms sliced
1 dry onion, chopped
100 g  bacon diced
fresh rosemary finely chopped
100 gr mild flavored graviera cheese (Greek type of gruyere made of sheep's milk)
400 ml milk cream
salt, pepper
50 gr  fresh butter
olive oil


Preheat oven at 170° C

1.  Sprinkle potatoes with salt and pepper and slightly sauté with butter and rosemary. Strain on kitchen paper.

2.  In another pan, sauté the finely chopped onion and the bacon with some olive oil and stir until the onion softens well.

3,  Butter a baking pan or 4 smaller ovenproof ones and place the potatoes all over. Spread the bacon and onion mixture over the potatoes.

4.  Pour the milk cream and finally spread the grated cheese on.

5.  Bake  for about 20 minutes.
