Penne with Asparagus and Smoked Salmon
Loaded with nutrients and flavors, this quick vegetable and seafood pasta is a very satisfying dish.
400 g penne
200 g asparagus
2 onions sliced
2 cloves garlic pureed
fresh dill, finely chopped
200 g smoked salmon
1/4 cup tsipouro or vodka
400 ml cream
50 g butter
Clean the asparagus, cut them in half and keep the tips, which are tender, for later.
Chop the rest of the asparagus into small pieces and sauté with some butter, the onions and the garlic.
Add the smoked salmon and douse with the vodka or the tsipouro.
Then add the cream milk, the dill and the pink pepper combined together.
Finally add the tips of the asparagus and leave the sauce to simmer for 2 to 3 minutes. Be careful it does not turn to a boil and ruin the sauce.
In the meantime boil the pasta, drain and combine with the sauce.
Garnish with the tips of the asparagus and parmesan flakes (optional).
