Karyotiko (a kind of eggplant salad)
This salad is so hearty and full of interesting and flavorful ingredients it is a great main dish.
½ kg eggplants
1 garlic head
100 g caper
200 g sardines, salted
Finely chop garlic, onion, parsley and capers.
Remove the bones, intestines and tails from the sardines and keep only the flesh.
Roast the eggplants until the flesh is very soft and the skin is easily removed.
Skin all of the eggplants, chop them up and place them in a salad bowl.
3. Add the garlic, onion, parsley, and capers.
Chop sardines into small squares and place them in the salad bowl.
Add as much olive oil, vinegar and salt as needed.
Very lightly combine all the ingredients together and serve.
