Grilled Fish with Tomatoes

For this dish choose any fresh fish you can find , such as red mullet, snapper or dorado, of medium size.  Simple, light, fresh ingredients make this a perfect summer time meal.

Ingredients:

  • 4 medium sized fish, suitable for grilling
  • 2-3 ripe tomatoes
  • olive oil
  • salt to taste
  • juice of one lemon
  • oregano

Procedure:

Preheat grill.

Grill the fish.

At  the same time, either on the same grill or another, grill selected ripe tomatoes.

Grill on all sides and once the tomatoes are soft, but haven't yet split open, remove from heat.

Peel the tomatoes; this will be quite easy to do.

Cut them in half, removing as many seeds as possible.

Do this quickly, before the tomatoes cool.

In a bowl, finely chop the tomatoes, add olive oil, salt, lemon juice and oregano, and beat together with a fork or whisk.

Dip the fish in this delicious, thick, red sauce and serve.
