Green Olive Spread (Tapenade Verte)
This Tapenade Verte is an elegant, full-flavored spread and its as versatile as it is delicious. While you may be tempted to eat this green olive tapenade by the spoonful, straight from the jar, there are many ways to serve this excellent condiment. Dab some tapenade olive spread on cucumber slices or liven up a wedge of goat cheese. Your guests will adore this all natural savory green olive appetizer spread.
12 oz jar pitted green salad olives - drained
1 shallot, finely chopped
1 tsp fresh lemon juice
freshly ground pepper
1/2 c olive oil
1 handful chopped chives
- Finely chop shallot
- Chop chives
1. In a food processor or small mixer, combine olives, shallot, lemon juice, pepper and half of the olive oil. Add anchovies if desired.
2. Pulse until mixture is a course paste consistency. Use more oil if necessary.
