Fresh Goose Liver with Wine from Limnos and Sautéed Granny Smith Apple

Ingredients:

  • 600 gr of fresh goose or duck liver
  • Glass of Limnos Moschato wine
  • two cooking apples
  • butter
  • 1 tsp little demi glace
  • 1 ½ kilo of Fresh Goose Liver
  • 4 cherry tomatoes
  • salt and pepper

Procedure:

In a hot, buttered frying pan sauté the liver and deglaze with Limnos wine.

Remove liver and add some demi-glace for the sauce.

In a second frying pan we sauté the sliced apples and the pleurotus mushrooms.

Place the sautéed apples on the plate, the liver on top and pour over the sauce.

Garnish with pleurotus mushrooms and cherry tomatoes for color.
