Chicken Salad Tossed with Sweet Pepper & Goat Cheese Spread
Chicken salad is the best thing to make with leftover cooked chicken. Serve over lettuce or in a sandwich. This recipe is an interesting variation of the classic version of chicken salad.
4 cups cooked, shredded chicken
1 medium onion chopped
1 garlic clove finely chopped
3 Tbs olive oil
2 jars Sweet Pepper & Goat Cheese Spread
salt and pepper to taste
6 sprigs fresh parsley finely chopped
4-6 lettuce leaves for garnish
1. Sautee the onion and garlic in 1 tablespoon of oil.
2. Combine the chicken with onion-garlic mixture and all remaining ingredients.
3. Serve over lettuce leaves or put into a sandwich with fresh country bread.
