Artichokes with Rocket and Pecorino
Take care of the way you treat artichokes. It's a vegetable which is delicate and needs careful cleaning.
4 artichokes, cleaned
juice of 3 lemons
100 ml olive oil
1 clove garlic pureed
1 bunch rocket
100 gr pecorino
salt & pepper
Slice the artichokes into thin slices.
Prepare a dressing with the juice of the lemons, the olive oil, the garlic, salt and pepper.
Marinate the sliced artichokes for 2 hours
Serve them on a layer of rocket leaves with grated pecorino, and dress the salad with the marinade.
