Oven-Baked Grouper or Salt Cod Fillet (Bianco)

Sometimes when we want to cook we tend to look for an elaborate dish to make, and we overlook the simple but classic preparations. Here you will find a Greek classic, very easy to make, and true to the flavours of the ingredients!
( *the name is probably Italian and was left over from Venitian times!)

1 kg white grouper or salted cod
200 ml olive oil
800 gr potatoes
4 cloves of garlic
juice of 2 lemons
2 tsp oregano
5 sprigs parsley


Wash and trim the fish and then divide into portions. If it’s a cod first de-salt.

Wash and peel the potatoes, slice them and lay them on a greased baking pan.

Finely chop the parsley.

Preheat oven to 180° C

Use a frying pan sauté the fish in the olive oil with the crushed garlic cloves. Finish with lemon juice, season and sprinkle some oregano.

Lay the fish cuts over the potato slices and add the sauce from the pan. Cover the pan with a baking parchment and bake in the oven for 45 minutes. 

Add some water while baking and serve sprinkling with chopped parsley.



The same method of cooking can be done in a casserole on low heat.
