Vegetable Stew (Boutridia) NP
This Zakynthian specialty is an idea dish for vegetarians since it is all fresh vegetables cooked in the oven. Ideally it is served with fresh bread and fresh “Ladotyri” a unique white cheese produced only on the island of Zakynthos certain seasons.
250 g of fresh beans
500 g of white beet
1 medium aubergine (egg plant)
3 medium potatoes
250 g of zucchini
250 g of okra
3 or more cloves of garlic, minced
½ cup (120 ml) of olive oil
1 kg of ripe tomatoes
freshly ground black pepper
Preheat oven at 190°C.
- Clean and cut aubergines, potatoes and zucchini is small cubes.
- Peel and grate tomatoes
1. Half cook the beans and the white beet separately for 4 minutes, drain and chop.
2. Saute the other vegetables (apart from the tomatoes) in olive oil.
3. Place the beet, beans and the tomatoes in a baking pan along with the remaining vegetables, salt and pepper, and bake for 1 ½ hours in a moderate oven (at 190°C). Every so often, check to see if any water needs to be added.
