Beet Root Salad NP
A brightly colored and refreshing salad that is great as an entree or a side dish. So easy to prepare!
1 kg beet roots
4 cloves garlic, chopped
a pinch of marjoram
a pinch of basil
a dash of vinegar
1 cup yogurt
orange zest, toasted briefly in the oven
salt and pepper
1. Boil the beet roots in plenty of salt water for about 35 minutes or more and let them cool.
2. Slice and arrange in a serving dish.
3. In a bowl mix the rest of the ingredients and pour the mixture over the beet roots.
