Spring Salad with Lettuce, Avocado and Fresh Mushrooms
A crunchy tasty spring salad makes a good accompaniment to meat.
1 large romaine lettuce
1 bunch lambs lettuce
1 large avocado peeled and cut into strips
1 small cucumber diced
200 gr fresh white mushrooms, sliced
100 gr cherry tomatoes or sun dried tomatoes (optional)
For the dressing
3 tbsp olive oil
juice form 1 lemon
2 tsp mild mustard
1 tsp honey
1. Wash the romaine lettuce thoroughly and cut it roughly with your hands.
2. Place all ingredients in a salad bowl.
3. Using a fork start whisking the olive oil with lemon, gradually add the mustards and honey, salt and pepper and continue whisking until you get a smooth, homogenous mix.
4. Pour dressing over the salad, mix well and serve immediately.
