Grouper in White Wine
Oven-baked grouper in white wine: easy to prepare and healthy. It can easily be accompanied by potatoes, salad or cooked greens (horta).
1 kg grouper
1 cup of olive oil
3-4 garlic cloves
1 cup white wine
juice of two lemons
a bit of oregano
Preheat the oven to 250°C
Clean the fish: remove the scales, gills and entrails.
Chop the garlic in brunoise
Cut the fish down the spine as though you want to filet it and place it in a pan skin-side down.
Season with salt and pepper, and sprinkle with oregano and garlic.
Beat the oil with the lemon juice. Add the wine and then pour it over the fish.
Bake in the oven for 40 minutes.
