Grape Must Pudding-Moustalevria
This delicious dish combines naturally sweet grape must and a little semolina flour to create a texture somewhere between a gelled dessert and a cream.
- 7-8 glasses grape must
- 1 glass fine semolina
Bring grape must to a boil and gradually stir in semolina.
To prevent lumpiness put semolina in a sieve and shake over pot while stirring.
Stir constantly and cook for about 45 minutes over moderate heat until pudding is thick and creamy.
Taste for sweetness and add sugar if desired.
Remove from heat and pour in individual shallow bowls or in large shallow platter.
Sprinkle with chopped nuts, cinnamon and sesame seeds.
