Summer Pasta with fresh tomatoes
We have the pleasure of introducing you to one more of our glorious simple Mediterranean dishes! This pasta sauce can be used for any type of pasta; try linguini, rigatoni, or farfalle. Make this recipe in the summer when tomatoes are in season, wishfully you can pick the basil from your and, splurge on the feta!
1 kg very ripe tomatoes, chopped
2 cloves garlic, pureed
3 tbsp olive oil
1 large bunch fresh basil, chopped
200 gr. feta cheese, crumbled
1 tbs fresh thyme
salt / freshly ground black pepper /
500 gr. linguini
We prepare this dish as if we are going to make a salad. Mix well all the ingredients except spaghetti in a large serving bowl.
Prepare the spaghetti according to their written instructions, preferably al dente. While still very hot, throw them in the spaghetti bowl. Toss well. Season generously with pepper and serve immediately.
