Spaghetti with Smoked Fish
A quick and easy pasta recipe that makes excellent use of smoked fish.
- 280 gr spaghetti
- 100 gr smoked fish (trout or salmon)
- 100 gr dairy cream
- 2 fresh onions finely diced
- 4 tbs tomato sauce
- 2 tbs white alcohol (tsipouro, raki)
- some Worcestershire sauce
- 40 gr butter
- salt, white pepper
Saute the onion with half the butter for 3-4 minutes in a teflon frying pan.
Add the tomato sauce and allow to simmer over low heat.
Mix half the fish with the dairy cream in a blender and add to the tomato sauce in the pan.
Add raki (or tsipouro) and simmer for 3-4 minutes until the sauce is of the right consistency.
Boil the spaghetti, strain, and add to the pan.
Mix the pasta well with the sauce.
Add the remaining butter, dill, and fish in small pieces.
Add white pepper to taste.
