  • 3 large quince
  • 1 quince, peeled and finely grated
  • 1 cup sweet wine
  • 2 tbs  raki or ouzo
  • 1 tbs  honey
  • 8 cloves
  • 1 tsp cinnamon
  • juice from 2 lemons

Preheat the oven at 200° C.

Peel, halve and deseed the remaining quince  and toss them in a bowl of cold water where you will have previously added the juice from two lemons.

Strain the quince  well and arrange them in a pyrex dish and stick a clove on them.

Sprinkle with the sugar, grated quince and cinnamon.

Slightly warm the wine and dissolve it in the warm honey.

Pour this over the quince , do the same with the raki / ouzo and cover the quince  with foil.

Place the pyrex dish with the quinces in the oven and bake at 180° C for approximately 60 minutes.

Remove the foil and allow the quinces to brown for 10 more minutes.

Serve them with a teaspoon of yogurt or whisked fresh cream.

A no sugar dessert that is actually an ancient recipe.
