Muhallebi (Turkish Pudding)
Muhallebi is a traditional Turkish milk pudding. It is characterized by the fact that rice flour is used to thicken it.
1 kg milk
250 g sugar
80 g rice flour
1. Mix in a bowl the rice flour and the sugar and slowly add the milk, taking care that the rice flour dissolves completely.
2. Pour the mixture in a non-stick saucepan and place it over the heat, stirring it continuously with a wooden spoon until it thickens.
3. As soon as it starts to thicken, add the vanilla.
4. Serve the cream in a bowl and let it cool off.
