Green Garlic Sauce
This luscious green garlic sauce gives extra flavor and color over grilled chicken or fish.
- 1 cup (250 ml) extra virgin olive oil
- 3 medium potatoes boiled, peeled and cut in pieces
- 4 garlic cloves, crushed
- 4 tbs red wine vinegar
- 5 tbs parsley, finely chopped
- olives and parsley for garnish
Blend garlic and parsley in food processor with 2-3 quick turns.
Drop potatoes piece by piece through feed tube, making sure each piece has been completely mixed before adding more.
Add gradually and vinegar, one after the other oil.
Adjust salt and extra vinegar, according to taste. Serve in bowl and garnish with parsley leaves and olives.
