Fusilli with Zucchini and Ham
This hearty pasta recipe is equally delicious whether served hot or cold.
500 gr. of fusilli pasta
3 zucchinis, cleaned and diced
1 spring onion, minced or blended
1 firm, red tomato
1 clove of garlic, finely chopped
3 tablespoons of olive oil
100 gr. of grated parmesan cheese
250 gr. of leg ham, diced
freshly ground pepper
Clean and dice zucchini
Finely chop garlic
Cook the fusilli in plenty of salted, boiling water. When ready, drain and allow to cool.
Heat the oil in a pan and sauté the onion, garlic, tomato and zucchini.
Add salt and pepper.
Sauté all the ingredients well until all the liquid from the vegetables has cooked off.
Then, add the ham and stir through.
Put the fusilli in a large bowl and pour in the ingredients of the pan.
Mix and then sprinkle the parmesan cheese over the top.
