Carrots glazed with honey
Carrots glazed with honey must be the best side to festive's dining table whether it's with roast beef or pork or roast turkey.
1 tbsp extra virgin olive oil
1 kg carrots cut as you like
1 cup home made broth
1/2 cup honey
2 tbsps balsamico
coarse sea salt and freshly ground pepper
2 tb unsalted butter
In a large heavy skillet, in medium-high heat we warm the oil and then add carrots, until they brown well.
We then add the broth, honey, and the balsamic vinegar and season according to our taste. We bring to boil, and then lower the temperature to minimum, cover and cook until tender. If there is much liquid still, we uncover and we cook a bit more until siropy to taste. We check the seasoning, add the butter, stir well and serve.
