Salad with Lentils and Dates

Serve this nutritious salad in  a round dish and garnish with fresh vegetables (carrot, celery, endives cut into long strips and dressing with olive oil and balsamic vinegar).

Ingredients:

250 g red lentils
150 g  dates without the stones
2 fresh onions, finely chopped
1 tablespoon ginger, grated
200 ml olive oil
100 ml balsamic vinegar
1/2 tsp cumin
1/2 tsp spice
1/4 tsp clove, grinded
salt, pepper
fresh vegetables for garnish

Procedure:

  • Finely chop onions
  • Grate ginger

1.  Boil the lentils for twenty minutes and drain.

2.  Sauté the fresh onions with a little oil and add the ginger and the dates finely chopped.

3.  Extinguish with 50 ml balsamic vinegar and add salt and pepper.

4.  Stir in the lentils with the date mixture, the spices, the rest of the olive oil and balsamic vinegar.
