Red Mullet with Tomatoes
This sweet and light tomato sauce is a perfect match for the delicate red mullet.
one portion of red mullets
salt and pepper
some fresh butter
Clean the mullets, rinse and place them in a bowl and put salt on them.
Peel the tomatoes, mash them and place them in a skillet to cook in their own juices.
Add salt, pepper and a pinch of sugar, to avoid the sour taste of the tomatoes.
Cover with a lid and leave the tomatoes to simmer for about 15 – 20 minutes.
Just before it is ready place the mullets in the tomato sauce, making sure that there are plenty of tomatoes covering the mullets.
Leave them to cook without the lid for a few minutes and once they are ready place some butter on each mullet .
Sprinkle with plenty of finely chopped parsley and serve.
