Potato Soup

This is a perfect soup for a cold winter evening or to give some food love to a person who needs care!  Potatoes can make filling meals that don't cost much!

4 large potatoes
2 quarts water
1 large carrot
6 sprigs parsley
1 medium tomato
1 tsp caraway seeds
1/4 tsp garlic salt
2 tsp salt
1 bay leaf
1 medium onion
2 tbsp  butter 
2 tbsp  flour
1/2 cup sour cream, optional


1. Peel and shred the carrot. Chop the tomato. Finely chop the onion. Cut potatoes into strips, then crosswise in 1/4 inch slices. Add the potatoes, carrot, parsley, tomato, caraway seeds, garlic salt, salt and bay leaf to a large pot of water. Bring to a boil, then simmer for about 30 minutes or until potatoes are tender (do not mash).

2. Sauté onion in butter until limp. Add flour and cook, stirring until light brown.

3.  Add ladle of potato water and cook, stirring until smooth and bubbly.

4. Stir mixture into potato soup, and cook a couple more minutes. If desired, mix some of the soup with sour cream. Blend; add to soup. 

5. Remove bay leaf and enjoy!
