Oven-Roasted Crispy Potatoes
Baking potatoes this way is a Greek classic, so do try it at home. Don't be surprised if some of them are picked by your guests straight from the baking tray: they do look really tempting!
- 2 kg roasting potatoes
- olive oil
- oregano, thyme, marjoram, one of each
- salt and pepper
Preheat oven to 200°C.
Peel the potatoes, dry on kitchen towels and cut in half if medium-sized or into quarters if very large.
Spread them on a baking tray and smother with olive oil, salt, pepper and the herbs.
Bake for about an hour or until golden and tender, turning them half way so that they cook evenly.
Enjoy with roast meats or on their own.
