This is a delicious, healthy and easy to make rice, adding a nice twist and change of tastes to one of our favorite side dishes.
- ½ kg Karolina rice
- 1,2 liters water
- 1 onion
- 4 cloves
- 25-30 saffron strings
- 1 ½ tsp salt
- 100 gr small black raisins
- 70-80 gr pine nuts
- juice of one lemon
- 2 tbs oil
Put the water to boil with the salt, saffron and the whole onion with the cloves stuck on it.
Meanwhile, rinse out the rice in a colander.
When the water comes to a boil, add the rice and the raisins and stir well.
Let it absorb the water, take off the heat and cover it with a damp towel and let it sit for 15-20 minutes.
Then remove and throw out the onion with the cloves and add the lemon, oil and pine nuts.
Stir well with a fork and serve.
