This delicious vegetarian soup should be in every cook's repertoire.
1/2 cup (125 ml) olive oil
2 1/2 cups medium size lentils
6-7 cups of water
1 medium onion, finely chopped
2 garlic cloves, finely sliced
1 large carrot cut in rounds
2 bay leaves
3 tbs balsamico vinegar, or any red wine strong flavored vinegar
salt & pepper
1. Heat oil on low temperature and sauté onions, garlic and lentils.
2. Add carrots, bay leaves, water, vinegar and spices.
3. Season to taste and simmer for about 1 hour, until lentils are soft and the soup has thickened. Serve hot.
