Spaghetti with Clam Sauce
This easy and inexpensive meal is good with any kind of pasta but is often served with linguini. Try it with a dry, zesty Pinot Grigio for balance with the clam sauce.
1/2 kilo spaghetti
1 large can mussels or clams
1/2 - 3/4 cup oil
2 garlic cloves
1 small can peeled tomatoes
1 teaspoon oregano
salt & pepper
- Finely chop parsley
1. Place olive oil, garlic, parsley, and crushed tomatoes in medium saucepan.
2, Simmer until mixture thickens.
3. Drain cans of mussels well and add to sauce with seasonings simmering until sauce blends.
4. Boil spaghetti as directed in water and salt, and drain.
5. Pour clam sauce over spaghetti. Garnish with a few parsley sprigs.
