Father's day Steak
I have never heard a father who turned down good old fashioned steak. Tell your butcher to give you the best quality steak; Florentine is my favorite if your butcher has got it.
You only have one father! He deserves the best.
2 Florentine steaks, approximately 300 gr. each
3 tbsp extra virgin olive oil
coarse salt and freshly ground pepper
1 tsp fresh thyme chopped (optional)
Heat a cast iron grill pan until almost smoking.
Oil the steak lightly, put it in the hot pan and cook for 4 minutes on each side. Remove, drizzle it with remaining olive oil, salt, pepper and thyme if using, let rest for one minute and serve immediately to the hungry father!
According to my taste, it's better to cut the steak into thin slices on the diagonal, but today it's up to him to decide!
