Vegan: Spinach Pie

During Greek Lent, this spinach pie without feta cheese is one of the favorites. Perfect for vegans and vegetarians!

ingredients

1/2 kg fresh spinach
1/2 kg various greens (chicories, zohoi, kaukalithres, lapata, neflles, paza, poppies, whatever we can find at the greengrocer or in nature)
1/3 cup olive οil
1 large onion
5 fresh onions
1 leek(only the white part)(optional)
1 bunch dill
1bunch parsley
3/4 cup of olive oil
1/2 kg home made pastry or ready made phyllo
Salt, pepper

instructions

  • Wash and rinse the spinach and the vegetables. Put them in a colander and let them strain.
  • Chop  the onions (fresh and dry) and the leek in brunoise
  • Finely chop the herbs

Preheat the oven to 200°C.

1. Heat the olive oil in a saucepan and lightly Sauté the onions and the leek.

2. Add and mix spinach, vegetables, dill, parsley, salt and pepper. Remove from heat. Οil a shallow baking tray and spread half of the pastry one by one.

3. Spread the stuffing, sprinkle with grοund pepper and then add the rest of the pastry oiling it again one by one.

4. Mark the pieces lightly cutting through the top layer of the pastry.

5. Οil the pie with the rest of the olive oil and bake it for 1 hour.

*If you make the pie with homemade pastry, spread 4 pastry on the shallow baking tray and then spread half of the stuffing. Spread 2 more pastry and then the rest of the stuffing. Finish by spreading 4 pastry on the surface.
