1. In a saucepan boil the black eyed beans and strain them.
2. In another saucepan saute lightly the finely chopped onions, fennel, dill, sfelitsi and the spinach.
3. Add salt, pepper and the tomato paste dissolved in water.
4. Boil them for about 20 minutes, then add the black eyed beans and let them absorb their broth.
*Black eyed beans can also be accompanied by siIverbeets instead of spinach.
