Salad: Spring Salad with Lettuce Avocado and Fresh Mushrooms

A crunchy tasty spring salad makes a good accompaniment to meat. Slice the mushrooms and avocado at the last minute because they discolour quickly.

ingredients

1 large romaine lettuce
1 bunch lambs lettuce
1 large avocado peeled and cut into strips
1 small cucumber
200g fresh white mushrooms,
100g cherry tomatoes or sun dried tomatoes (optional)

For the dressing
3 tbsp olive oil
juice form 1 lemon
2 tsp mild mustard
1 tsp honey
Salt-pepper

instructions

  • Cut the cumuber in cubes
  • Slice the mushroms

1. Wash the romaine lettuce thoroughly and cut it roughly with your hands.

2. Place all ingredients in a salad bowl.

3. Using a fork start whisking the olive oil with lemon, gradually add the mustards and honey, salt and pepper and continue whisking until you get a smooth, homogenous mix.

4. Pour dressing over the salad, mix well and serve immediately.
