- Finely chop the parsley
- Cut the onion in brunoise
- Portion the chicken into small pieces
- Dice the tomato and the apple (cut them in the shape you would like to eat them!)
1. Fry the chicken in 1 tbsp of oil until lightly browned.
2. Add water and simmer for 20 minutes until chicken pieces are tender. Drain and put aside.
3. Add onions, garlic, tomatoes, parsley and apples to the frying pan and sauté over medium heat.
4. Add sugar, ginger and curry powder. Sprinkle with flour and pour in broth or coconut milk ( add slowly so as not to add too much and make your sauce too thin).
5. Add grated coconut and chicken and sauté for an additional 10 minutes over medium heat.
6. Serve hot with rice.
