- Soak cod in water overnight
- Cut potatoes into wedges
- Finely chop the onion
- Slice garlic
1. Cook onion in a pan with ½ glass of water.
2. Once all the water has been absorbed, add the sliced garlic and the olive oil.
3. Sauté the onion and garlic lightly then add the tomato. Simmer for 10 minutes.
4. Add the potatoes and just enough water to cover.
5. In 20-25 minutes, add the cod. If necessary, add a little water.
6. Cook for a further 20 minutes until the potatoes are done and the fish has cooked through. Serve hot.
