Ezme (pulped salad)

"1 cucumber julienne cut
2 middle-sized tomatoes, julienne cut
2 Tbs spearmint, julienne cut
1 pinch of parsley, julienne cut
3 long green peppers, julienne cut (optional)
1 small onion, finely sliced
3 garlic cloves, crushed
½ tsp black pepper
1 Tbs red pepper pulp
2 Tbs ""sour pomegranate juice"" (nar eksisi) or 2 Tbs lemon juice
4 Tbs olive oil
salt to taste"

1 cucumber julienne cut

1 Tbs red pepper pulp
2 Tbs ""sour pomegranate juice"" (nar eksisi) or 2 Tbs lemon juice
4 Tbs olive oil
salt to taste

instructions

Skin the tomatoes, julienne cut them and place them in a sieve to strain from their juices. Finely cut each of the rest of the ingredients, mix them up and continue cutting them until they look squashed.

In a separate bowl, combine the olive oil, pepper, sour pomegranate or lemon juice, with the pulped red pepper and pour the mixture over the vegetables. Blend everything together and serve in room temperature.
