- Peel the courgettes and potatoes and grate them coarsely. Squeeze them in a colander to get as much moisture out as possible.
- Chop the mint
- Crumble the feta by hand
Preheat the oven to 200o C.
1. Mix all ingredients in a large bowl.
2. Butter a large oven proof dish and spread the mixture. Level with a spatula and grate the hard cheese on top.
3. Bake until golden on top, about 45 to 60 minutes.
4. Let the “omelette” cool, cut into pieces and refrigerate until needed.
