Preheat oven at 180° C.
1. Beat the sugar with the butter, add the egg and the vanilla and beat until the mixture turns white and then add the flour.
2. Wrap the dough in cellophane and place it in the fridge for 30 minutes.
3. Using a rolling pin, roll open the dough approximately 1/2 cm thickness then cut with a cookie cutter.
4. Bake at 180°C for approximately 10 minutes and leave them 5 minutes to cool.
