Cooking Basics: Red Pepper Spice (Harrisa)

This is a gift of the Middle East to the lovers of spicy condiments! There is great satisfaction in using your own hot chilli sauce, feel free to try adding your own spices, only make sure you do not name it harrisa as this is an established traditional sauce!

ingredients

2 tbsp caraway seed, ground
5 cloves garlic, crushed
1/2 cup cayenne pepper, ground fresh
1/4 cup cumin
2 tbsp salt
1/2 cup olive oil

instructions

1. Thoroughly mix all ingredients with a mortar and pestle.

2. Store in a glass jar with a tight-fitting lid; refrigerated. Unknown shelf-life.
