To prepare the crepe: Mix the flour with the salt, the lemon peel, the sugar, the eggs, the butter and finally the milk. When the mixture thickens, spread and cut into small pieces. Warm the caramelized apples and cut into small pieces, placing them into the crepes. Fold them and serve warm, pouring over the sorbet.
