In contrast to caviar, lumpfish roe is relatively cheap. Teamed with creamy avocadoes it makes a lovely and easy starter. Substitute with salmon roe for a striking colour contrast.

3 ripe avocadoes cut in half, pit removed
1 jar (100gr) lumpfish roe
Lemon juice

instructions

1. Cut the avocados in half, remove the pit and brush with lemon juice to prevent discolouring.

2. Fill the cavity with 1-2 tsp of fish roe and serve immediately with a lemon wedge on top.
