Appetizer: Pumpkin Fritters

We make fritters of all types in the med, curiously pumpkin fritters are of the rare type and wouldn't be considered so traditional. This recipe is extremely tasty, as the sweetness of the pumpkin is balanced well with the freshness of the herbs!

ingredients

1 kg sweet pumpkin
2 fresh onions or 1 large dry onion
1 cup breadcrumbs
1/2 bunch fresh spearmint
6 sprigs fennel leaves
salt, pepper,
olive oil for the frying

instructions

  • Finely chop the spearmint, the fennel leaves, and the onions
  • Grate the pumpkin with the thick side of a grater. Add salt, leave it to strain. If needed strain them again by hand.

1. In a large bowl mix all the cut vegetables and herbs.

2. Add breadcrumbs, salt, pepper and knead them well. Put them in the colander until they strain.

3. Form into flat balls. Flour the balls on a plate and fry them in hot olive oil until golden brown. Strain them on an absorbant paper.

4. Serve hot with a refreshign yogurt dip.
