- Finely chop the spearmint, the fennel leaves, and the onions
- Grate the pumpkin with the thick side of a grater. Add salt, leave it to strain. If needed strain them again by hand.
1. In a large bowl mix all the cut vegetables and herbs.
2. Add breadcrumbs, salt, pepper and knead them well. Put them in the colander until they strain.
3. Form into flat balls. Flour the balls on a plate and fry them in hot olive oil until golden brown. Strain them on an absorbant paper.
4. Serve hot with a refreshign yogurt dip.
