2 cups boiled chick peas
2 country sausages and 6 slices bacon cut into thick slices
1 green and 1 red pepper thinly sliced
2 mature tomatoes grated
1 dry onion diced
2 grated garlic cloves minced
1g saffron powder
1 tsp cayenne pepper
1/3 cup white wine 4-6
½ bunch parsley finely chopped
1. Sauté the onion and meat with the garlic in some olive oil.
2. Add them to the mixture, add salt and pepper and finish with the wine. Cook over high heat for a few minutes until the liquids have reduced
3. Add the tomatoes, saffron, cayenne and chickpeas.
4. Lower the heat and boil for about 20 minutes. Garnish with freshly chopped parsley and serve cold or warm.
