Artichokes with Rocket and Pecorino

4 artichokes, cleaned
juice of 3 lemons
100 ml olive oil
1 clove garlic pureed
1 bunch rocket
100 gr pecorino
salt & pepper


Slice the artichokes into thin slices.

Prepare a dressing with the juice of the lemons, the olive oil, the garlic, salt and pepper.

Marinate the sliced artichokes for 2 hours

Serve them on a layer of rocket leaves with grated pecorino, and dress the salad with the marinade.

When cleaned mmediately immerse the artichokes in a bowl with water, lemon juice and parsley stalks to prevent discoloration.
