1/2 kg fresh spinach
1/2 kg various greens (chicories, zohoi, kaukalithres, lapata, neflles, paza, poppies, whatever we can find at the greengrocer or in nature)
1/3 cup olive οil
1 large onion, chopped
5 fresh onions, chopped
1 leek, only the white part, chopped
1 bunch dill, finely chopped
1 bunch parsley, finely chopped
3/4 cup of olive oil
1/2 kg ready made phyllo
Preheat the oven at 200oC. Heat the olive oil in a saucepan and lightly Sauté the onions and the leek.
Add and mix spinach, vegetables, dill, parsley, salt and pepper. Remove from heat.
Οil a shallow baking tray and spread half of the leaves, one by one, oiling well in between.
Spread the stuffing, sprinkle with grοund pepper and then add the rest of the pastry oiling it again one by one.
Mark the pieces lightly cutting through the top layer of the pastry.
Οil the pie with the rest of the olive oil and bake it for 1 hour.
You may use frozen spinach, but the taste will not be as delicious!
